Crusty Fillet of Salmon with a Sunblush tomato Vinaigrette


4 Salmon Fillets (6oz each)
2oz olive oil.
Salt and pepper

For vinaigrette

10 sunblushed tomatoes (4oz) roughly chopped
6oz olive oil
1 teaspoon olive oil

Crusty Fillet of Salmon with a Sunblush tomato Vinaigrette

Check salmon fillets for bones and then season. Heat a large frying on a high heat and add olive oil, place salmon fillets in the pan for about 4 minutes without turning. When the crust is crispy turn it over and cook for about 3 minutes on the other side.

For the vinaigrette – Blend all the ingredients together in a food processor for about 1 minutes. Taste for seasoning.

To serve place the salmon on a plate and pour a little of the vinaigrette over and around the salmon. Garnish with a sprig of parsley and a wedge of lemon.
